Besides the restrictions of this diet, please include the following on a regular basis:
Eat raw local honey throughout the day to maintain blood sugar
Honey contains B vitamins. Remember that with the microvilli damaged, your ability to absorb fully digested saccharides and sugars is very limited. Your system needs a healthy level of blood sugar for all functions.
Unless l have told you not to, eat as much coconut, coconut milk, and coconut oil as you can
Coconut is very healing to the gut lining. It is beneﬁcial to the immune system, in general, and specifically to the thyroid. Macaroons made with honey can be a beneficial snack.
A morning eggnog made with coconut milk is a great start to the day.
Start with the following ingredients:
- 1/3 can coconut milk
- 2 fertile organic eggs or yolks
- 2-3 tsp. honey
- optional: frozen or fresh fruit
Beat the eggs with a fork in a bowl, adding a few drops of liquid iodine. Put all ingredients into a blender and blend until smooth.
Coconut milk comes in cans (my favorite is Thai Kitchen Organic). Always get the full fat version. If the solids have separated from the liquid, just put the whole contents of the can in the blender and mix up. Store in a glass jar in the refrigerator. Coconut milk won’t last more than a few days in the fridge, so if you think you won’t use it up in that time, freeze some of it in ice cube trays and pop out as needed.
Eat homemade “jello” daily
Try to eat a serving with each meal. The proteins in gelatins are very restorative to your full system, which is suffering from malnutrition because of poor absorption.
To make homemade jello, find frozen juice concentrate with no sugar. Pour the concentrate into a casserole dish and sprinkle three Tablespoons of gelatin over it to soften. While it softens, boil four and 1/2 cups of water. Stir the juice concentrate and gelatin to mix it in well and then slowly stir in the hot water until the gelatin is completely dissolved. Refrigerate until solid.
Optional: add canned or frozen (not fresh) fruit once the gelatin is slightly cooled and/or stir in coconut milk to make it creamy. Try adding pineapple juice with crushed pineapple; when the gelatin-fruit mixture is solid, mash with a pastry blender and stir in coconut milk.
Eat liver in any forms you can that are SCD ‘clean.’ Very restorative.
Eat soups made with bone broths and dark leafy greens
Use meaty bones, adding ¼ cup of vinegar for each three quarts of water, when making stock. The vinegar releases the minerals and gelatins more completely.
