One of my favorite quick dinners is pizza made with spelt tortillas. Here is the recipe:

Ingredients:

  • one Rudi’s Whole Grain spelt tortilla per person
  • olive oil
  • cheese
  • tomato sauce (or not!)
  • whatever fixings you like on your pizza

Directions:

  1. Preheat your oven to 375 ̊
  2. Lightly coat both sides of each tortilla with olive oil, and place on a baking sheet or a large piece of parchment paper. Build your pizza. It’s that easy.
  3. If you are using sliced tomatoes rather than tomato sauce, you’ll have better results if you put them on top of the cheese layer – the cheese will help protect the thin bread layer from the juices.
  4. Slide your pizzas into the oven (middle rack) for about 10 – 12 minutes. If the pizzas aren’t too messy, I’ll slide them directly onto the baking racks about halfway through cooking. You want them to be nice and crispy on the bottom but not overcooked on top.

Note: You can also cook them on the grill. Heat to around 375 ̊. Place the pizzas on a double layer of aluminum foil, and watch carefully so the bottoms don’t burn. Be aware they can cook very quickly!
