Rice Vinegar Basic Dressing

Ingredients:

  • 1/4 cup of rice vinegar (plain, not the seasoned or “gourmet” variety)
  • 1-2 tsp. garlic powder
  • 1-2 tsp. ground coriander
  • 1-2 Tbsp. raw honey
  • 3/4 cup oil blend (I use mostly sunflower oil with a bit of extra virgin olive oil to create a light flavored dressing)

Directions:

  • Blend together the first four ingredient and let sit for about fifteen minutes before whisking in the oils.

Variations:

  • Poppyseed Dressing: add 2 Tbsp. of poppyseed (great with sliced strawberries on salad)
  • Raspberry Vinaigrette: add 1/2 cup frozen raspberries, thawed and smashed

Balsamic Vinaigrette

The better the ingredients, the better the dressing. You can put the ingredients into a glass jar, shake to blend, and keep leftovers in the fridge. Just mix together the following:

Ingredients:

  • 1/4 cup organic balsamic vinegar
  • 2/3 cup extra virgin olive oil
  • 1 tsp. garlic powder
  • 2 tsp. raw honey (optional)

Green Goddess Dressing

This dressing is creamy and rich and will make salad lovers out of the fussiest eaters.

Ingredients:

  • 2 cups mayonnaise
  • 4 Tbsp. coconut milk (the kind that comes in a can)
  • 6 Tbsp. water
  • 6 Tbsp. chopped flat-leaf parsley
  • 2-4 Tbsp. chopped sun-dried tomato
  • 1/2 tsp. dried mint
  • 1/4 tsp. dried basil
  • 1/4 tsp. Hungarian paprika
  • 1/4 tsp. dried oregano
  • 1/4 tsp. Cajun spice blend
  • 1 tsp. garlic powder
  • 1 tsp. fine-grind sea salt
  • 2 Tbsp. raw honey

Directions:

  • Put all ingredients in a blender and blend until smooth. Refrigerate.
